- Make mint chutney first... In a blinder add mint leaves, coriander leaves, green chillies, lemon juice and garlic Cloves... Blead it for a minute Now pour in a bowl and add salt take the chutney aside for later use.
- Now come to the nest.. Mashed the potatoes properly, then add Cumin powder, coriander leaves, green chillies, red chilli powder, chat masala, salt and lemon juice. Mix well Place the mixture in the fridge for about 30 minutes
- In a separate bowl add all-purpose flour, corn flour and water and make a slurry (not more thick nor rainy)
- Also take vermicelli crushed in a bowl take a side for later use
- Now from the potatoes mixture make them shape like a bowl Dip in the flour slurry then vermicelli (make sure vermicelli cover it completely as this is the ingredients that make the cutlet look like a nest.) place in freezer for 20 minutes
- In a mean while, take cottage cheese mashed it by using hands add black pepper and some salt Make small balls and fry then for 30 seconds (make sure its doesn't change the color, cook on low flame) these are the eggs of the nest..
- Now its time to fry the nest in the semi hot oil. Fry it for 2 3minutes use medium low heat (don't over fry it) just wait for the golden color
- Now it time to assemble the nest.. In the potatoes nest arrange some mint leaves on it then spread some mint chutney in between then arrange the eggs in it
- Tadda the best creation of mine is ready to eat... Potatoes n vermiculite nest with cottage cheese eggs are ready...
