- For Dosa
- 1/4 cup masoor dal
- 1/4 cup chana dal
- 1/4 cup toor dal
- 1/4 cup urad dal
- 1/4 cup yellow moong dal
- 2 cup brown Rice
- 2 cup rice powder
- 1/4 cup flattened rice (chuda/poha)
- 1 tsp methi dana
- For Stuffing
- 4 medium boiled Holland potatoes, mashed
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1 tsp chana dal
- 1 tsp urad dal
- Few curry leaves
- 2 green chillies
- 1/4 tsp hing powder
- 1 medium onion chopped
- 2 tomatoes chopped
- 1/4 turmeric powder
- as required Salt
- 1/2 tsp podi masala powder
Steps to make to make Dosa, Sambhar, Chutney
- Wash dals and brown rice 3/5 times. Soak rice, dals, methi over night or 4 hours in warm water. Soak poha for an hour.
- Mix the soaked ingredients without adding salt and make a fine paste. Add the price powder and mix well. Keep in the oven, overnight to ferment. Add salt, mix well, the dosa batter is ready.
- To make potato stuffings, heat oil in a pot. Add mustard seeds and let them splutter.
- Add curry leaves and fry for 30 seconds. Now add both dals, hing chilli and onion. Fry till onions are soft.
- Add chopped tomatoes, salt and turmeric and podi powder.
- When tomatoes are soft and mushy add mashed potatoes and mix well. The stuffing of Dosa is ready now.
- To make Dosa Add salt to fermented dosa batter. Heat tawa,grease with oil. Sprinkle some water to bring down temperature.
- Spread dosa batter. Spread oil, around the dosa. Keep the flame low to medium.
