- 1/4 Piece Roasted Nutmeg
- 1 Blade Roasted Mace
- 1/2 Roasted Star Anise
- 1/2 inch Roasted Cinnamon Stick
- 5 Whole Roasted Red Chillies
- 1/4 Cup Cooking Oil
- 2-3 tbsp Clarified butter
- 2 Sliced Onion
- 400 gm Mutton Pieces
- 1/2 tbsp Garlic Paste
- 1/2 tbsp Ginger Paste
- as needed Water
- as per taste Salt
- 1/2 tsp Turmeric Powder
- 1/2 Cup Yogurt
- 1/2 tbsp Red Chilli Powder
- 5-6 Dried Plums
- As per requirement Fresh Coriander
- as required Fresh Mint
- 125 gm Potatoes(Boiled With Zarda Pilaf Colour)
- Ingredients For Rice Preparation:
- 400 gm Soaked Biryani Rice
- As required Water
- as per taste Salt
- as required Lemon Juice
- Ingredients For Biryani Layering:
- As needed- Sliced Tomatoes
- as needed Fresh Coriander leaves
- as required Fresh Mint
- as needed Roasted Black Peppercorns
- 1/4 tsp Zarda Pilaf Colour
- as per taste Lemon Slices
- as per taste Fried Onion
Steps to make to make Mutton Sindhi Biryani
- In a mixie jar grind all the roasted spices, keep it aside.
- In a pressure cooker add oil and ghee, let it heat.
- Add sliced onion and fry until it becomes translucent.
- Add mutton pieces along with ginger- garlic paste and cook until the mutton colour changes.
- Add salt, turmeric powder and red chilli powder, mix it well.
- Add yogurt on a low flame and stir it nicely.
- Add prepared Sindhi biryani spices, mix it well.
- Add water, put a lid and let it cook until the mutton becomes tender.
- In a pot add soaked rice along with water, salt and lemon juice. Once a boil comes cover the pot and let it cook on a low flame.
- Open the cooker, add boiled potatoes and dried plums, mix it well and dry the extra gravy.
- Once the mutton is ready and rice is ready start the preparation for layering of the biryani.
- In a wok spread cooked rice, mutton pieces, sliced tomatoes, green chillies, coriander leaves and mint leaves, black peppercorns and fried onion.
- In the same way prepare the second layer.
- Finally on the last layer, spread rice, pour zarda pilaf colour (add 1tbsp water and dilute it in zarda pilaf colour) and lemon wedges, fried onion, coriander leaves and mint leaves.
- Cover the lid and let it cook on a low flame for 15 minutes.
- After 15 minutes put off the flame, and let it rest for another 5 minutes.
- Open the lid and dish out the mutton Sindhi biryani.
