  11. 2 bay leaves
  12. Small piece mace
  13. 1/2 tsp jeera

  17. 1 cup paneer cubed
  18. 1 cup boiled peas
  19. 1 tsp red chilli powder
  20. 1 tsp garam masala
  21. 1 tsp coriander powder
  22. 1/2 tsp aamchur powder
  23. 1.5 tsp sugar
  24. 1.5 tsp kasuri methi

Instructions to make to make Matar Paneer Restaurant Style

  1. Onion tomato Gravy base Method: In a pan, add a tsp of oil, saute jeera, cardamom, then onion. Once the onion turns translucent, add ginger & garlic paste & saute until raw smell goes. Finally, add cashews and tomatoes and cover & cook until tomatoes turn mushy. Cool & grind to a smooth paste adding little water. Strain the mixture. This is the gravy base.
  2. Boil peas for 10mins or until cooked.
  3. Lower the flame, add the red chili powder and coriander powder, and saute. Adding the red chili powder at this stage enhances the color of the gravy. But be careful not to burn the spices. keep the flame on low.
  4. In a pan, add ghee or oil, add jeera, cinnamon, bay leaves, cloves, mace, green chilies, and saute for 1 minute. Add ½ tsp of Kasuri methi at this stage.. it gives a nice aroma if added at this stage.
  5. Then add the gravy base and set the flame to medium. Cover and cook for 1 minute. (Gravy starts to boil and splash. so keep it covered)
  6. Add garam masala, amchur powder, salt, and sugar (sugar to balance out the tanginess of tomatoes)and let it boil.
  7. Once the gravy thickens, add peas and paneer, Kasuri methi followed by a dollop of butter(totally optional) and adjust the gravy consistency by adding the required amount of water, adjust the salt and simmer for 2 or 3 minutes.
  8. Add cream if you want it to be more rich and creamy. Serve it with hot phulkas or jeera rice.
