- 7 large potato, boiled, peeled, diced,
- 3 tbsp mustard oil,
- 1 med sized onion thinly sliced,
- 2 garlic cloves crushed,
- 1/2 inch ginger grated,
- 1/2 tsp haldi powder,
- 1/2 tsp red chilli powder,
- 1 tsp dhania powder,
- 2 med sized tomato diced,
- as per taste Salt
- 3 green chilli slitted,
- as per need Some chopped dhania patta,

- Take a wok or pan, add oil, heat it.
- Add onion, stir fry it until light brown.
- In goes Aloo, stir fry it for a minute.
- Add ginger garlic, stir fry it for a minute.
- Now add haldi, dhania & red chilli powder, stir fry it till light brown.
- Add tomato & salt, stir fry it for 2 minutes.
- In goes green chilli & dhania patta, stir fry it for 2 minutes.
- Turn off the flame, cover it with the lid for a minute.
- Take out in a serving bowl, have it with Ajwain Paratha.
- All cooking has been done on high flame.
