  14. 50 ml tomato paste
  15. 3 small tomatoes
  16. 2 rosemary sprigs
  17. 2 sprigs parsley
  18. Zest of 1 lemon
  19. 4/5 small spring onions
  20. 1 TS brown sugar

Steps to make to make Giant beans in the oven|plant based & vegan

  1. Soak the giant beans over night
  2. Next day add the beans with a bit of salt in a pot and simmer on medium heat for 1 hour
  3. In the meantime and while the beans are cooking : Wash well and cut all veggies - I also added some small thinly sliced veggies as it was left over from my baby’s food 😅
  4. Turn oven on 180 on fan to prepare. Add all veggies including onion, garlic, tomato paste, sugar, bay leaves and cinnamon sticks, in a pot on medium high heat, add olive oil and cook. After 15 min, add rosemary, parsley, lemon zest and mix. Add stock with water and mix.
  5. Now add wine and let it evaporate for like 15 min. Then add beans, salt and pepper and stir.
  6. Add everything in an oven enamel or Pyrex dish and place in the oven for 1 hour covered. You have to check every 15 min to see whether you need to add a bit of water. After 1 hour it should be ready. Add parsley and feta and serve! Enjoy!
  7. Yum!
