- For Sandwich stuffing.. 1. First boil the potatoes in a pressure cooker.
- Heat 1tbsp butter in a pan and add cumin seeds. Saute till the cumin seeds change color. Add spices, chopped green chilli and curry leaves. Keep on low flame.
- Mix well and add the mashed potatoes. Saute on a low flame for 2 minutes
- Then add chopped coriander leaves. Mix well. Keep this aside.
- Cut in slices onion, capsicum and tomato. Keep aside.
- Spread butter evenly on the bread slices.
- Now apply green chutney. Apply potato filling over it. Place onion, tomato and capsicum slices.
- Sprinkle dry mango powder upon it.Cover with another bread slice.
- Now roast it on a grilled pan from both sides on low flame by applying butter.
- Toast the sandwiches till crisp and golden.
- Remove in a plate and spread some chutney and sev on top of the sandwiches. Enjoy this healthy sandwich with sauce, chutney and schezwan chutney. You can also grate cheese on the top.
