  10. 1 tablespoon Ginger garlic paste

  14. 1/2 tablespoon Red chilli powder

  19. 2 tablespoons butter
  20. 2 tablespoons cooking oil and some more to shallow fry
  21. Chopped coriander leaves 1 tablespoon

  23. Grated cheese
  24. Green chutney
  25. Tamarind and dates chutney
  26. Tomato ketchup
  27. 1/4 cup Veg. Mayonnaise sauce
  28. Large half cooked wheat rotis or tortillas 6
  29. 1 tablespoon Cooking oil
  30. Water to sprinkle

  1. First, heat up oil in a pan and splutter cumin seeds.
  2. Then add onions, ginger garlic paste and saute well. Then add one by one all the vegetables and saute well.
  3. Add salt, spices and cook on medium flame till veggies are cooked and slightly crunchy. Stir in mashes potatoes, paneer, and cook well.
  4. Now adjust seasoning, add chopped coriander leaves, lemon juice and mix well. Cool this mixture.
  5. Make small croquettes and roll in fine sooji. Shallow fry on oil in a pan and drain on kitchen paper.(Alternatively you can just use the mixture within frying as a healthy option as I did.)
  6. Now to assemble the Kathi Roll: heat a skillet or tawa. Add oil. Place the half cooked roti with cooked side up. Spread your choice of chutney on top. Then spread Mayonnaise sauce on top.
  7. Place the vegetable roll and sprinkle chopped onion, cabbage, cheese and roll up tightly.
  8. Then tawa roast both the sides till crisp. Then roll in a butter paper wrap. Serve immediately with green chutney, ketchup and enjoy!
