- For balls Boil potatoes In a pan add oil, mustard seeds,grated garlic,grated ginger,chilli paste,curry leaves,udad dal 1 spoon, salt,turmeric powder and the boiled and mashed potatoes Mix well Switch off gas Now add finely chopped cilantro Roll into balls and keep aside
- For batter Add chickpea flour or besan in a bowl Add 2 tsp of rice flour Add salt,turmeric powder, red chilli powder baking soda,a tsp of lemon juice Add some water to make a medium consistency batter
- While deep frying Roll the balls in the batter and deep fry till reddish Fry some green chillies too Fry to form besan strings
- While serving Slice the pav Apply sweet-sour tamarind chutney Spicy green chutney Dry red garlic chutney Place the vada between the two sides of the pav Add a dash of the besan strings Add a green chilli
- Serve hot with green chutney sweet-sour tamarind chutney dry red garlic powder and some fried green chillies
